Thibaut Janisson Fizz
Without a doubt, Claude Thibaut is the best sparkling winemaker working today on the East Coast of the USA if not the entire country. Like us at Cecile's, Claude believes the average wine drinker just doesn't drink enough bubbly, and so he's developed the great value TJ Virginia Fizz to be enjoyed on any occasion and within any budget. Claude makes TJ Fizz from the same great Chardonnay grapes grown around Charlottesville and used in his flagship wine. But, TJ Fizz is made via the same "Charmat" method used to make Italy's Prosecco. And, in fact, if regular Thibaut-Janisson is an American take on Champagne, TJ Fizz is Virginia's answer to Prosecco.
Like Prosecco, TJ Fizz is less, well, fizzy than Champagne with a creamier, softer, texture. It bursts with aromas of fresh, yeasty, green apple followed by ripe green and yellow apple fruit plus a hint of mineral and yeast in the mouth. It's a round, creamy, wine filled with ripe fruit and a long, lingering, finish. Super easy to drink and enjoy before or after graduating students march down the Lawn. (That's a Charlottesville/U.Va. reference for those unfamiliar with The University).
